There is only one thing I can think of.
Let me introduce you the easiest and yet one of the most delicious salads in my world; Shepard’s Salad with Quinoa.
Not only it is super easy to put together (less than 7 minutes) but also it actually is good for you.
I used to make this at night to take it with me for lunch next day. Because quinoa is basically protein it makes you feel full. Totally a “meal-worthy” dish!
I love quinoa because I can make 1-cup of it, store it in the fridge and use it whenever I want. How easy is that??
The best thing about this salad is that you use the ingredients that are already in your fridge unless you only do frozen meals. If you do, don’t. Tomatoes, onions, lemons and all other salad veggies are good for you.
For this salad if you do not have an ingredient no need to worry. You can always replace it with another salad item like red (yellow or green) bell peppers or red onions.
On another note, the star of this recipe is parsley. If you can, let it sit in the fridge for half an hour or so to allow the aroma of the parsley to get into the other items.
It serves for two but I usually eat the whole thing myself.
I simply cannot get enough of it!
