Addictively delicious 30-minute Almond Butter Cookies made with simple ingredients like almond flour, almond butter and coconut sugar.
- Chocolate chunks - Eggs - Almond butter - Salt - Vanilla extract - Almond butter - Coconut sugar
Starting from the dry ingredients, place all the ingredients in the bowl of your food processor.
Pulse to mix and then process for 45-60 seconds until the dough forms into a ball. If adding chocolate chips, transfer the dough into a bowl and mix in the chocolate chips.
Using a 2-inch cookie scoop or two spoons, measure 2-tablespoon balls and place them 2-inches apart on a parchment-lined baking sheet.
As a final touch, sprinkle the cookies with a pinch of sea salt. Bake for 13 minutes or until they spread slightly and turn golden brown. Enjoy on it's own or with a glass of milk!
