Almond Flour Ricotta Cake is a beautifully golden Italian-inspired cake with sweet notes of ricotta cheese and lemon.
- Unsalted butter - Egg yolks - Egg whites - Cane sugar - Kosher salt - Sliced almonds - Ricotta cheese - Almond flour - Lemon juice & lemon zest
Line a cake tin with parchment paper. Cream the butter and sugar until light and fluffy. Add the yolks and remaining wet ingredients.
Add almond flour and salt to the ricotta mixture. Beat the egg whites to stiff peaks and fold them into the batter just until combined.
Pour batter into prepared cake pan, Top with sliced almonds. Bake for 50-55 minutes, let it cool and serve!
