Grilled Shrimp Corn Salad Recipe

A colorful, protein-packed salad that is the perfect excuse to light up the grill. Made with grilled shrimp and corn, this salad is filling, healthy, and easy to make!

Ingredients

- Grilled shrimp - Grape tomatoes - Scallions - Butter lettuce - Feta cheese - Lime dressing - Grilled corn

Make the lemon dressing

Whisk the olive oil, zest of lime, lime juice, minced garlic, salt and pepper. Set bowl aside.

Assemble The Goodness!

Place butter lettuce leaves, tomatoes, scallions, corn, and shrimp in a large  salad bowl. Top it off with feta cheese. Drizzle it with the dressing.

Toss & Serve!

Gently toss the salad ingredients  and serve as a  starter or side dish for your next spread. It is filling enough to serve as a lighter main dish as well.
