Here's a coleslaw that is full of crisp cabbage and crunchy carrots that are tossed in a healthy coleslaw dressing.
- Greek yogurt - Dijon mustard - Lemon juice - Celery seeds - Apple cider vinegar - Salt & pepper
Mix together yogurt, lemon juice, vinegar, honey, dijon mustard, celery seed, and salt and pepper in a bowl and give it a good whisk.
Place green cabbage, red cabbage, and carrot in a bowl. Add in the chopped scallions and fresh parsley (optional).
Pour the dressing over the vegetables. Give it a toss, and make sure that the vegetables are fully covered with the dressing.
You can serve it immediately, or if you have the time, cover it with stretch film and place it in the fridge for up to 3 hours.
