Mexican Street Corn On The Cob

Also called elotes, this easy Mexican Corn Recipe is a show stopper. It is also a great appetizer or side dish for any outdoor gathering.

Grill The Corn

Fold the husk of each corn back leaf by leaf and tie them with kitchen twine. Lightly brush corn on the cub with oil & grill.

Make The Sauce

Whisk together mayonnaise, sour cream,  chili powder, and lime juice in a bowl.  Taste and add more mayo or sour cream  to your preference.

Brush With The Sauce

Using a pastry brush, distribute the elote sauce all over the now-roasted street corn. Be generous, it is delicious!

Sprinkle The Toppings

Sprinkle it generously with cotija cheese and garnish with chopped cilantro and a light sprinkle of chili powder seasoning.

Grab Some Friends And Serve!

Serve it with wedges of lime on the  side and a cold beer! Bite, lick your  lips and smile wide!
