Mexican Street Corn Pasta Salad

Saute corn

Heat oil in a skillet over medium-high heat. Stir in the corn sauté for 5-7 minutes until it starts to get  charred.


Make the chili lime dressing

Mix together mayonnaise, sour cream, chili powder, lime juice, salt and pepper in a small bowl.


Assemble the salad

Place cooked pasta, jalapeno, onion, cilantro, and cotija cheese in a bowl.


Drizzle with the dressing

Pour the chili-lime dressing over the salad. Give it a toss.


Place in a bowl & enjoy!
