Great for any mushroom lover, this quick, umami-rich shiitake soup is an easy to make one-pot weeknight delight that is guaranteed to impress.
- Vegetable broth - Heavy cream - Water - Onion - Shiitake mushrooms - Unsalted butter - Lemon juice - Salt&pepper - Garlic - Nutmeg
In a large pot, saute the onions and thyme in butter. It should take 6-7 minutes until the onions are translucent.
Cook shiitake mushrooms until they soften, about 5 minutes. Add the garlic and saute for another 30 seconds.
Once boiling, cover the soup and turn it down to medium-low and allow it to simmer for 15 minutes, stirring once or twice.
Off the heat, carefully puree the soup using an immersion blender or food processor until it is smooth to your liking.
Return the soup to the stove and set it to medium heat. If you are using the half and half, stir that in and bring it to a quick boil.
