These Mascarpone Stuffed Dates are topped off with nuts and pomegranate seeds. This is probably the easiest dessert you can make in minutes.
- Medjool dates - Mascarpone cheese - Walnuts - Honey - Pomegranate arils - Pistachios
Using a paring knife, slice dates lengthwise, being careful not to cut them all the way through. Remove (and discard) the pits and set them aside.
Using a small spoon, stuff each pitted date with a teaspoon of mascarpone cheese. If you are making a bigger batch you can use a piping bag for this.
Dip the filled dates into the bowl with pomegranate seeds. Gently press them so that they will stick to the cheese.
Dust each stuffed date with chopped walnuts or pistachios. Set them onto a plate. Drizzle the mascarpone-stuffed dates with a tablespoon of honey. Serve!
