Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup black rice
  • 1 ¾ cups water or vegetable or chicken stock
  • ½ teaspoon kosher salt optional

Instructions

  • Place black rice in a medium-mesh strainer and wash under cold running water until it runs clear.
  • Grease the rice cooker insert with a tablespoon of vegetable oil to prevent sticking. I use a sheet of paper towel to distribute the oil evenly throughout the insert.
  • Place rinsed black rice, liquid of your choice, and salt. Give it a stir.
  • Put the lid on and press the brown rice setting on your rice cooker. If your rice cooker does not have that function, then just press "cook".
  • It should take somewhere between 50-60 minutes for it to cook completely.
  • Once it is done, open the lid, and fluff it with a fork before serving.

Notes

  • The nutrition information below is for 1 cup of cooked black rice.
  • Depending on the rice cooker you are using there might be a slight difference in the method so be sure to check your manual before cooking.
  • Storage leftover black rice in an airtight container in the fridge up to 5 days.
  • You can follow the same recipe and water to rice ratio to cook Black Glutinous Rice in the rice cooker.
