Instant Pot Black Rice Recipe (Pressure Cooker Method)

Ingredients

  • 1 cup black rice aka forbidden rice
  • 1 cup water chicken stock or vegetable broth
  • Pinch of salt optional

Instructions

  • Rinse forbidden rice in a fine-mesh strainer under cold water until water runs clear.
  • Transfer it to the Instant pot, pour in the liquid, and a pinch of salt, if using.
  • Secure the lid. Move the steam release valve to Sealing position.
  • Select Manual/Pressure Cook to cook on high pressure for 17 minutes.
  • When the cooking cycle is complete, let the pressure naturally release for 8-10 minutes, then move the steam release valve to Venting position to release any remaining pressure.
  • Carefully open the lid. Fluff it with a fork and serve.

Notes

  • The nutritional values below are for 1 cup cooked black rice.
  • The active cooking time will vary based on the type of wild rice you are cooking. If you are using:
    • Chinese black rice/Forbidden rice: It will take about 17 minutes cook time.
    • Black glutinous rice in pressure cooker: It will take about 20 minutes.
    • Black Japonica rice in Instant Pot or pressure cooker: It will take about 20 minutes.
      However, keep in mind that it typically takes 5-7 minutes for the Instant Pot to come to pressure first. Then you will cook the rice as listed above (from 17-20 minutes). After, it takes about 10 minutes for the pressure to release. So, most black rice dishes come together in an Instant Pot in about 30-33 minutes total.
  • Storage: You can store leftover rice for up to three days in the refrigerator in an airtight container.
  • Reheating: Reheating black rice is simple. You can put it in a bowl in the microwave or heat it gently in a saucepan on the stovetop. You may have to add in a few tablespoons of water if it is too dry.
