Air Fried Eggplant is a delectable, savory side that cooks to tender perfection in minutes. Made with no breadcrumbs, this is an easy & quick way to serve eggplant.
- Eggplant - Oil - Salt - Italian seasoning - Paprika - Garlic powder
Cut your eggplant into 1-inch cubes to make cubed eggplant. Alternatively, you can slice the eggplant into 1/2-inch slices.
Sprinkle the eggplant cubes with ½ teaspoon of salt, covering all sides with equal seasoning. Let the salted eggplant rest for 15 minutes.
Use either paper towels or a clean kitchen towel to pat dry the surface to remove any excess moisture.
Place the vegetables in a large bowl, drizzle them with oil, and seasonings. Toss the mixture until thoroughly combined.
Place the eggplant cubes in a single even layer in the air fryer, being sure not to overlap or overcrowd the basket.
Air fry the pieces for 12 minutes, shaking them halfway through. Check for doneness by inserting a paring knife in one cube.
