Air Fryer Elotes (aka Mexican Street Corn) are perfect for a quick weeknight side or part of a full-on fiesta menu! And it only takes 20 minutes to prepare!
- Sour cream - Mayo - Lime juice - Crumbled cojita cheese - Fresh cilantro - Ears of sweet corn
Brush each ear of corn with vegetable or olive oil while the air fryer preheats. Once the fryer is ready, place ears of corn in the air fryer basket and cook for 5-6 minutes.
Check your corn and rotate the ears to ensure even cooking. Fry for another 7-8 minutes (a total of 12-15 min of air frying time).
While your corn is cooking, assemble your sauce by gently mixing your mayonnaise, sour cream, lime juice, and chili powder in a small bowl.
Remove corn from the fryer basket and allow to cool. Cover each corn generously with the Mexican street corn sauce. Sprinkle with Mexican cotija cheese, chopped cilantro, and chili powder.
