These gluten free muffins are a delicious treat or an afternoon snack, simply made with almond flour and sweetened with apples and maple syrup.
- Apple slices - Walnuts - Maple syrup - Almond flour - Baking powder - Baking soda - Kosher salt - Cinnamon - Eggs - Oil - Vanilla extract
In a bowl, whisk together eggs, maple syrup, coconut oil, and vanilla extract on a bowl until emulsified.
Mix almond flour, baking powder, baking soda, kosher salt, and ground cinnamon in a bowl until no lumps remain.
Pour the wet ingredients into the dry ones and mix until fully combined. It should be a thick but smooth batter.
Mix the apple slices into the batter and fold them in being gentle not to break them.
Line a muffin tin with parchment paper/lining and divide the batter equally among 12 cups.
It is optional but if preferred, top each muffin with 3 slices of apples (like I did in the pictures) and sprinkle them with walnuts.
Let apple muffins cool on a wire rack before serving. Enjoy with a cup of coffee, tea or a glass of milk.
