Naturally sweetened, gluten-free, dairy free, and paleo friendly lemon cake that is made with only 10 ingredients.
- Eggs - Almond Flour - Lemon - Oil - Cornstarch - Vanilla Extract - Baking powder
Seperate egg yolks and egg whites. Place egg yolks, maple syrup, and vanilla extract. Whisk until fully combined.
In a large bowl, mix almond flour, baking powder, and salt. Pour in the egg yolk mixture and whisk until fully combined.
Place lemon juice and salt into the egg whites and whisk until foamy. Gently fold the whipped egg whites into the batter.
Line a 9-inch cake tin with parchment paper. Brush with oil. Pour batter and bake until lightly golden brown. Let it cool on a wire rack.
When cooled completely, spread with whipped cream and top it off with fresh berries (or any seasonal fruit).
