- Almond flour - Large Eggs - Maple syrup - Strawberries - Baking soda - Whipped Cream Topping (optional)
In a large bowl, mix together almond flour, baking soda, and kosher salt until thoroughly mixed.
Whisk together eggs, maple syrup, oil and vanilla extract in a bowl until emulsified.
Pour the wet ingredients into the dry ingredients. Fold in 1/2 cup of the strawberries. Stir just until fully combined.
Place the cake batter in a springform pan, smooth the top with a spatula and bake in the oven until golden brown
If preferred, spread it with whipped cream and garnish with fresh strawberries and mint leaves.
