Butter Lettuce Salad

A 20-minute salad that is healthy, filling, and delicious. Packed with veggies, it is ideal as a side dish or a light meal by itself.

Ingredients for Dressing

- Garlic - Dijon mustard - Olive oil - Salt & pepper - Lemon juice

- Almonds - Peas - Radishes - Asparagus - Avocado - Cucumber - Butter lettuce

Ingredients for Salad

Make the lemon dressing


Place all the ingredients in a small bowl and give it a stir to combine. Set aside.

Blanch vegetables

Blanch asparagus and peas in boiling water for 3-4 min and transfer them into the bowl with ice water. Drain both vegetables and set them aside.


Assemble the salad

Place rinsed butter lettuce leaves in a large salad bowl. Add in asparagus, peas, cucumber, radish, almonds, avocado cubes, and parmesan cheese.


Drizzle & Serve

Drizzle it with the lemon vinaigrette dressing, give it a gentle toss, taste for seasoning, and serve right away.
