Here is an Italian-inspired 30 min. weeknight dinner/sandwich made with cooked chicken, mozzarella and tomatoes.
- Bread slices - Chicken breast - Basil leaves - Fresh mozzarella - Vgan mayonnaise - Sliced tomato
Slice tomatoes in 1/2 inch slices. Drizzle with lemon juice and balsamic vinegar and sprinkle with salt and pepper.
Lay sliced bread on a baking sheet and spread each slice with mayo. Top with tomatoes, sliced chicken, and fresh mozzarella.
Add summer fresh basil on top of each slice of bread and bake for about 10 minutes or until cheese is melted. Serve with a glass of wine and enjoy!
