A healthier and quicker alternative to the classic Italian (fried) Eggplant Parmesan but made in the air fryer. Just as delicious but healthier!
- Eggplants - Panko breadcrumbs - Large eggs - Parmesan cheese - Mozzarella cheese - Fresh basil - Tomato sauce - Seasonings
Slice the eggplant into 1/2-inch slices and spread them on the paper towels. Lightly sprinkle them with ½ teaspoon salt on both sides and let them rest for 15 minutes.
Gently pat-dry eggplant slices with a sheet of paper towel to remove the excess moisture.
Whisk eggs in a shallow bowl. In a separate bowl, combine panko, grated parmesan cheese, garlic powder, Italian seasoning, and black pepper.
Dip the eggplant first in the egg mixture and then in the breadcrumb mixture, pressing gently to ensure an even coating.
Place breaded eggplant slices in the basket of your air fryer on a single layer. If they don't fit, it is best to do it in two batches.
Air fry until crispy and golden brown on both sides for about 14 minutes, flipping halfway through.
Top each slice with marinara & mozzarella cheese. Air fry eggplant parm for 1 to 2 minutes or until the cheese melts. Serve right away!
