Here's a Green Pasta Sauce that comes together in less than 30 minutes for a tasty, light, and healthier alternative to pesto.
- Baby Spinach - Parmesan - Garlic Lemon juice & zest Olive oil - Any pasta (and shape) you have on hand
Bring a large pot of water to a boil. Add in the pasta and follow the package instructions to cook until it’s al dente. Reserve some pasta liquid for the sauce.
Heat the olive oil in a large pan over medium heat and add the garlic. Saute for 1 minute. Add the spinach, salt, and pepper. Cook, tossing regularly until the spinach has wilted.
Transfer your cooked spinach into a food processor or blender and add in the parmesan cheese, lemon juice, and the reserved pasta water.
Process the spinach sauce for pasta until fully pureed, taste, and add additional seasoning as desired.
Pour the blended spinach pasta sauce over the cooked pasta, using tongs to toss and combine gently. Serve your green spinach pasta with extra parmesan cheese on top.
