Barefoot Contessa's Irish Soda Bread made without yeast. This easy bread comes together with only 10 minutes of hands on time.
- All-purpose flour - Buttermilk - Currants - Egg - Salt - Baking soda - Sugar - Orange zest - Unsalted butter
In the bowl of an electric mixer with the paddle attachment, mix the flour, sugar, baking soda, and salt on low speed until combined, about 10 seconds.
Mix the cold butter pieces into the flour mixture at low speed until the butter is roughly the size of peas, about 1 minute.
In a large measuring cup, whisk together the cold buttermilk, egg, and orange zest using a fork.
With the machine running on low, slowly add the buttermilk mixture. Keep mixing on low until everything is combined, about 1 minute.
In a separate bowl, toss the currants with about 1 tablespoon of flour. Turn the machine on low speed and add the currants.
Dump the dough onto a well-floured board or surface. Knead for 1-2 minutes and shape it into a round loaf.
Transfer the dough onto the prepared sheet pan. Cut an X on top with a large serrated knife.
Bake for 40-45 minutes or until it turns lightly golden brown. When tapped on the bottom, the loaf should make a hollow sound.
