A one-pot Mediterranean chicken meal ready in under 1 hour! Tender chicken cooks gently with lemon, potatoes, olives, and loads of savory herbs for tons of flavor.
- Chicken thighs (or breasts) - Chicken broth - Olive oil - Potatoes - Lemon - Garlic - Olives - Thyme - Salt & pepper
Preheat the oven to 450 degrees F. Pat dry chicken thighs (or chicken breasts) with a sheet of paper towel.
Season chicken thighs with salt and pepper on both sides.
Set an oven-proof skillet over medium heat and add the olive oil. Place chicken, skin-side down, and sear until golden brown on both sides.
Scatter the potatoes and garlic evenly over the chicken and pour in the chicken broth. Turn it up to medium-high heat and bring to a boil.
Once the chicken broth has come to a boil, add the olives, lemon slices and thyme. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
Transfer the chicken into bowls along with creamy potatoes, burst olives and caramelized lemon slices. Spoon it with the juices before serving!
