This Tomato Mozzarella Pesto Pasta Salad is the ultimate side dish or light lunch that comes together in 30 minutes. A crowd pleaser, it can served warm or cold.
- Parmesan cheese - Fresh Mozzarella - Pesto salad dressing - Cherry tomatoes - Cooked pasta
Place basil, pine nuts, garlic, vinegar, lemon juice, parmesan, salt and pepper into the bowl of a food processor. Drizzle with olive oil & process.
Cook the pasta according to the package directions. Drain and place it in a bowl. Set it aside.
While the pasta is cooking, prepare the rest of the ingredients. Place tomatoes, mozzarella and parmesan in the bowl with the cooked pasta.
Drizzle the Caprese pasta salad with the pesto dressing and give it a gentle toss. Garnish with a handful of fresh basil leaves.
