Here is a gluten free & vegetarian quinoa salad that is perfect for a light lunch or a side dish. Ready in 15 minutes & meal prep friendly.
- Bell peppers - Cucumber - Feta cheese - Cherry tomatoes - Scallions - Baby spinach - Cooked quinoa - Avocado
Place the olive oil, lemon juice, garlic, dijon mustard, salt and pepper in a small bowl and give it a stir to combine. Set aside.
Place spinach, cooked quinoa, tomatoes, cucumbers, baby bell peppers, onion, avocado, and cheese in a large salad bowl.
Drizzle the lemon salad dressing over the salad to ensure it is well coated to enhance all of the flavors..
Give it a gentle toss. Serve this salad can hot or cold. It also makes a perfect side dish or light lunch.
