Red Kidney Beans
Place oil, onion, garlic, jalapeno, cumin, coriander, chili, powder in a heavy bottom pot and stir constantly.
Stir in drained and rinsed beans, diced tomatoes and their juices, tomato sauce, quinoa, corn, and vegetable stock. Give it a gentle stir.
Increase the heat to medium-high, put the lid on and bring it to a boil. Season with salt and pepper, then reduce to simmer for 10-15 minutes, stirring occasionally.
