Sweat the aromatics
Place oil, onion, garlic, jalapeno, cumin, coriander, chili, powder in a heavy bottom pot and stir constantly.
Add the rest of the ingredients
Stir in drained and rinsed beans, diced tomatoes and their juices, tomato sauce, quinoa, corn, and vegetable stock. Give it a gentle stir.
Let it simmer
Increase the heat to medium-high, put the lid on and bring it to a boil. Season with salt and pepper, then reduce to simmer for 10-15 minutes, stirring occasionally.
Top with your favorite chili toppings, such as sour cream, shredded cheese, avocado, jalapenos, radishes and serve.
