Southwestern Quinoa Salad

Made with homemade chili lime dressing, this Southwestern Quinoa Salad is a great meal prep salad packed with filling ingredients like quinoa & black beans.

Ingredients

- Black beans - Red onion - Peppers - Tomatoes - Corn -Scallions - Cilantro - Cooked quinoa

Make The Chili-Lime Dressing

In a small jar, combine the olive oil, lime zest, lime juice, garlic, ground cumin, chili powder, salt and maple syrup. Give it a good shake.

Assemble The Salad

In a large bowl, combine the black beans, corn, peppers, jalapeno, cherry tomatoes, scallions and red onion. Gently fold in the cooked quinoa, avocado and cilantro.

Drizzle With Dressing

Drizzle it with the salad dressing and give it a gentle toss to make sure that the dressing is equally distributed throughout the salad.
