Here is a 20-minute Mexican Breakfast/Snack recipe that is perfect for kids and adults. These spinach quesadillas require minimum prep time and maximum flavor.
- Shredded cheese - Fresh Spinach - Flour tortillas - Tangy Bang Sauce - Butter - Garlic
Melt butter in a large nonstick skillet over medium heat. Add the spinach, cover and cook for 3-4 min. Follow with the garlic, salt, and pepper.
Lay flour tortillas on a flat work surface. Place 1/2 cup shredded cheese on one half of each tortilla.
Then, divide the cooked spinach mixture equally among the tortillas and place it on top of the cheese.
Fold the plain half of the tortilla on top of the spinach. Brush each tortilla with melted butter or avocado oil.
Place the quesadillas butter side down in a skillet. Brush the top with melted butter. Cook 1-2 minutes on each side until the cheese melts and it's golden brown! Cut into wedges and serve!
