This Turkish Bulgur Wheat Pilaf is made with chickpeas, tomatoes and parsley. If you are a fan of Middle Eastern flavors, you will love this vegan side dish.
- Chickpeas - Olive oil - Green peppers - Tomato paste - Coarse bulgur - Onion - Tomato - Fresh parsley
Heat olive oil in a medium saucepan over medium heat. Add in onion and green pepper and saute until translucent, 3-4 minutes.
Add in tomato paste, ground cumin, bulgur, tomatoes, chickpeas, and water (or stock). Give it a stir to combine.
Bring it to a boil, put the lid on, and turn down the heat to low. Let it simmer for 10-12 minutes or until most of the liquid is absorbed.
