Here is an easy Zucchini Soup recipe made with only 5 ingredients. Vegan and GF, this soup comes together in 30 minutes.
- Vegetable stock - Potato - Garlic - Onion - Zucchini + Salt & Pepper
Place zucchini, onion, potato, garlic, vegetable broth, and salt and pepper in a medium size saucepan.
Put the lid on, bring to a boil and let it simmer for 20-25 minutes until zucchini and potato are softened and tender.
Check doneness by inserting a knife into a zucchini. If it comes in & out easily, it should be cooked.
Using an immersion blender, puree soup until it is creamy. Taste for seasoning and add in if necessary.
Place the soup into bowls and garnish with yogurt sauce, sour cream, a drizzle of olive oil, or a squeeze of lemon juice and fresh herbs.
