Here is a healthy, protein-packed Asian style quinoa recipe with a delicious peanut butter/sesame ginger dressing and a crunchy topping!
- Cooked quinoa - Shredded carrots - Sliced red cabbage - Edamame - Cucumbers - Peanut butter ginger dressing
Place 1 cup rinsed quinoa, 2 cups water, and a teaspoon salt in a saucepan. Bring to a boil and let it simmer for 12 min. Fluff it with a fork.
While the quinoa is cooking, place all salad dressing ingredients in a jar (or a small bowl) and give it a whisk until it is creamy.
Place the cooked quinoa in a large salad bowl and top it off with all the rest of the colorful veggies.
Pour the spicy peanut dressing over the salad and give it a gentle toss. Top it off with chopped organic roasted almonds and cashews with sea salt for that nice crunch!
