Learn how to make Tabbouleh (aka Bulgur & Herb Salad) in less than 30 minutes. If you are growing your own herbs, this vegan salad is a must-try.
- Fresh dill - Italian parsley - Scallions - Fresh mint - Olive oil - Bulgur
Whisk together tomato paste, water, and salt until combined. Place fine bulgur in a large bowl and pour the mixture over it. Let it rest on the counter for 10-15 minutes.
Meanwhile, make the dressing by whisking together olive oil, lemon juice, and salt and pepper.
Fluff the cooked bulgur with a fork. Chop the herbs and scallions and place them into the bowl with bulgur.
Drizzle the tabbouleh with the dressing. Give it a toss until it is fully incorporated. Serve right away.
