This is a healthier take on the old-school Italian dish. It's made by rolling eggplant with ricotta & cooking in tomato sauce. It is the perfect side dish for any meal.
- Eggplant Slices - Olive oil Ricotta cheese - Parmesan cheese - Breadcrumbs - Frehs Basil Leaves Tomato Sauce
Cut two eggplants lengthwise into 6 pieces. Lightly brush with oil and season with salt & pepper. Bake in the oven.
Make the ricotta filling by mixing ricotta, breadcrumbs, parmesan, lemon zest, and juice in a bowl.
While the eggplant is baking make the tomato sauce by cooking tomatoes with garlic & flavoring them with fresh basil leaves.
Fill the bottom of each eggplant slice with the ricotta filling and roll it onto itself. Continue until each piece is filled.
Place rolled eggplant seam side down into the tomato sauce. Broil for 5 minutes or until heated through. Garnish with parmesan & fresh basil before serving.
You can make this easy vegetarian dish in under an hour. It is a great recipe to serve along with chicken and meat dishes but can also be served by itself as a light meal.
