Jennifer Aniston Salad

This is the famous salad recipe that shook up the internet thanks to its popularity on social media. For a good reason, it's healthy, filling & delicious.

Ingredients

- Feta cheese - Chickpeas - Olive oil - Cucumbers - Lemon juice - Pistachios - Bulgur wheat (or quinoa)

Cook Bulgur or Quinoa

Place bulgur (or quinoa) & water in a small saucepan over medium heat. Bring to a boil, turn down the heat to low and cook until all the cooking liquid is absorbed.

Assemble Salad

In a large salad bowl, place the now-cooked bulgur, cucumber, chickpeas, red onion, fresh herbs, pistachios, and feta cheese.

Make The Dressing

In a measuring cup, whisk together lemon juice, olive oil, and salt and pepper. Drizzle it over the salad.

Toss & Serve

Give it a gentle toss, taste for seasoning, and add more if necessary before serving. Serve some right away & store the rest in airtight containers in the fridge for up to 5 days.
