A quick and easy vegetarian salad made with quinoa, lentils and fresh herbs. Ready in 30 minutes, this is the perfect side dish or light lunch.
-Red onion - Feta cheese - Kalamata olives - Lemon vinaigrette - Fresh mint leaves Quinoa
Place quinoa, lentils, cooking liquid, and salt in a medium saucepan and put the lid on. Cook until fluffy.
Make the vinaigrette by whisking together all the ingredients in a bowl or mason jar until emulsified. –
Add the rest of the ingredients; olives, red onion, mint, and feta cheese into the bowl. Drizzle the salad with the dressing.
Add sliced red onions & toss! Taste for seasoning and add more if necessary. Enjoy right away or store it in meal prep containers to serve throughout the week.
