A delicious free-form tomato tart that is made by spreading galette dough with an herbed goat cheese mixture and sliced tomatoes to later bake in the oven for a buttery savory galette.
- Summer tomatoes - Galette Dough - Goat Cheese - Scallions - Lemon Juice - Fresh Herbs
Place goat cheese, scallion, lemon zest, lemon juice, kosher salt, and pepper in a bowl. Give it a mix until thoroughly combined.
Make the galette dough in a food processor by mixing butter, flour, and salt with water. If you are new to making galette dough, check out my foolproof guide below.
Line a small sheet pan with a sheet of paper towel. Place tomato slices on top. Sprinkle it with salt and pepper. Let it sit for 10 minutes.
Spread the goat cheese mixture evenly over the galette dough. Arrange the sliced tomatoes over the cheese. It's okay if they overlap.
Roll the sides of the dough overlapping as you go around and pleating the dough. Bake in a preheated oven for 40-45 minutes or until the crust turns golden brown.
