Ingredients

  • 2 cups almond flour or 8.4 oz.
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 5 tablespoons unsalted butter melted and cooled
  • 4 large eggs
  • 1 tablespoon honey or keto friendly sweetener optional

Instructions

  • Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper and set it aside.
  • Mix together the dry ingredients, almond flour, baking powder, and kosher salt in a large bowl until no lumps remain.
  • Add in the wet ingredients, melted butter, and eggs. If using, add in your choice of sweetener. Stir until fully combined.
  • Using a large ice cream scoop, or 2 tablespoons measuring spoon, scoop biscuits onto the prepared sheet pan making sure that they are at least 1-inch apart from each other.
  • Bake for 25 minutes or until the top is lightly golden brown.
  • Transfer onto a wire rack to cool for 5-10 minutes.
  • Serve.

  • Keto Almond Flour Cheese Biscuits: Just add half a cup of shredded cheddar and 2 tablespoons of chopped chives for simple almond flour cheddar biscuits. Or, for a creamier option, you can even use shredded mozzarella cheese.
  • Paleo Biscuits: To give this sugar-free biscuits recipe a sweet twist, just add in 2 tablespoons of honey or maple syrup.
  • Almond Meal Biscuits: While blanched almond flour and almond meal can be used interchangeably in this recipe, the version with almond meal would be a bit more dense and darker in color. While the below version is made without any addition of sugar, you can add 2 tablespoons of honey, if you want it to be a bit sweeter.
  • Whole30: To make whole30 biscuits, just use ghee instead of melted butter.
  • Storage: These almond flour biscuits can be stored in an airtight container for up to 3 days at room temperature.
  • Freezer: To freeze the biscuits, let them first reach room temperature. Then, place them in an airtight container or freezer bag and freeze for up to 2 months.
  • Thaw: When ready to eat, remove the biscuits from the freezer and let them rest at room temperature for 15-20 minutes. Then, place them in a 250-degree F. oven for 5-7 minutes.
