Is there anything more hearty than soup? It’s a satisfying and heartwarming meal filled with vegetables, chicken, or ground beef that can be broth-based or creamy. Since the winters get a bit frigid up here in Vermont, my husband and I enjoy a big bowl soup on most weeknights.
Some of my best soup recipes to make include Vegetable Beef Soup, Vegetarian Butternut Squash Soup, and Lentil Soup. But on those nights when I feel like something a bit heartier, I make a Chicken Chili or Vegan Chili, both ready in less than an hour.
On those lazy Sunday afternoons, I bake a loaf of fresh no-knead bread to soak up the rich broth. But when I want soup for dinner, I pair them with one of my easy salad recipes. There is nothing like cozying up by the fireplace with a warm bowl of soup and a spoon.
