What is Shawarma?
Shawarma is among the most popular meat dishes in Middle Eastern and Mediterranean cuisine and is known for its earthy, warm, and savory flavors. To make traditional shawarma, chefs cook a large cut of marinated meat—usually chicken, lamb, beef, or turkey—on a vertical rotisserie rod (also known as a vertical spit), which slowly rotates to cook the protein incrementally. When the outer layer is ready, the chefs will slice off thin slices of meat, which they then add to the final dish.
One of the most iconic ways to serve shawarma is in a kind of Mediterranean “wrap” or “pita pocket.” In other words, people often begin with a piece of pita bread, lavash, or any other flatbread. They then spread the grain with a layer of cool, tangy Yogurt Tahini Sauce and top it with a combination of shawarma meat, tomatoes, cucumber, salad greens, and pickles to ensure it has tons of flavor. People often eat this dish with a side of creamy Hummus, garlic sauce, or another herby grain, like Tabbouleh.
Though “shawarma” usually refers to the meat in this dish, the meat usually carries the complex, sweet-yet-spicy taste of the shawarma seasoning blend used during the seasoning/marination process. Because of the mix’s robust taste, many use this seasoning mixture for other uses, from veggie seasoning to flavoring their grains.
What is in Shawarma Seasoning?
Diverse and flavorful, shawarma seasoning ingredients use all-natural spices to achieve its fresh, complex taste. Better yet, you can probably find all these ingredients in your spice cabinet, making this mixture a must-have in any kitchen.

How to Make Shawarma Spice?
It couldn’t be simpler to make this easy diy shawarma spice blend. In fact, you can whip up this five-star mix in less than five minutes!
- Combine the mix of spices: Add the ground cumin, ground coriander, paprika, garlic powder, black pepper, turmeric, ground cloves, ground cinnamon, ground nutmeg, and ground cardamom to a small mixing bowl. Whisk the ingredients together until thoroughly combined.
- Use and store: Use the spice blend in your identified recipe. Or, if you’re planning to use it later, store it in an airtight container or jar in a cool, dry place for up to six months.

One of my favorite things about this authentic shawarma seasoning recipe is how many ways you can use it—any day of the week! Use this five-minute rub to make my chicken shawarma seasoning, or add it to your go-to sides for an unforgettable spread.
- Use it to marinate meat or as a dry rub: You can effortlessly elevate any favorite protein—chicken (like my Chicken Shawarma recipe), beef, lamb, turkey, or fish—by infusing your meat with the warm and savory flavor of this delicious spice blend. If you want a dry rub, sprinkle an even layer of the shawarma mix over every side of your meat. Or, for a marinade, combine the homemade shawarma spice mix with oil and lemon juice and let your meat rest in it for a few hours—or even overnight!
- Roasting or grilling vegetables: If you can’t get enough of the iconic shawarma flavor but aren’t in the mood for meat, I have great news: This tasty seasoning is also a must-have for dozens of other cooked veggies, including cauliflower, eggplant, potatoes, and mushrooms.

Ingredients
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon ground turmeric
- ½ teaspoon ground cloves
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cardamom
Instructions
- Place ground cumin, coriander, paprika, garlic powder, black pepper, turmeric, cloves, cinnamon, nutmeg, and cardamom in a small airtight jar.
- Mix until thoroughly combined.
- You can use it immediately or cover it tightly with the lid and store it in a dark, dry, and cool place for up to 6 months.

- Yields: This recipe makes 3 ½ tablespoons to 4 tablespoons of Shawarma seasoning. The nutritional values below are for the whole recipe.
- Multiply the recipe: Making large batches of this shawarma mixture is a great way to ensure you always have it on hand whenever your recipe calls for it. Therefore, please feel free to multiply this spice recipe and store the extra mixture for later use.
- Addition of salt: Though some recipes may include salt among their shawarma spices, I prefer to omit this ingredient. Saltiness is hard to adjust in recipes—especially depending on your base—so I prefer adding salt according to the recipe I use.
- Use the freshest spices: It’s no secret that fresh spices have a brighter, more potent flavor than old or dried spices. Therefore, I highly encourage you to ensure your pre-ground seasonings are as fresh and flavorful as possible before adding them to your shawarma seasoning mix. Or—if possible—you may also grind your whole spices with a spice grinder for extra flavor.
- Experiment with the amount used: Depending on your desired recipe and the serving size of your dish, you might want to use more or less of this shawarma spice mix. Our rule of thumb is to use two tablespoons per pound of meat, but you may add more or less if you prefer a stronger or milder flavor. (Keep in mind that if you make this recipe as written, you’ll come out with 3.5-4 tablespoons of seasoning, which is ideal for two pounds of meat.)
- Toast your spices (if you have the time): While it may sound like an extra step, toasting your spices before grinding will take this spice blend to the next level. To do so, add the whole spices to a dry skillet and toast, stirring often, over medium-low heat for about 4-5 minutes. Then, you can use your spice grinder to grind them to a fine powder. Remember that following our recipe, you can use an equal amount of any whole spice, but the amount may be slightly less or more than its version made with ground spices.
